Ingredients

For the dough:

4 ½ cups (550 g) all-purpose flour
2 teaspoons (14 g) fresh yeast
2 tablespoons (30 g) sugar
2 teaspoons (10 g) salt
1 large egg
1 cup (230 ml) warm milk
3 tablespoons (50 ml) extra virgin olive oil

For the filling:

Cooked ham, diced (as needed)
Scamorza cheese, diced (as needed)

For brushing:

1 egg yolk
1 tablespoon milk
Instructions
1. Prepare the Dough

In a small bowl, dissolve the fresh yeast in warm milk with the sugar. Let it sit for about 5–10 minutes until slightly frothy.

In a large mixing bowl, combine the flour and salt. Add the egg, olive oil, and the yeast mixture. Mix until a soft dough forms.

2. Knead to Perfection

Transfer the dough onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic. The dough should be soft but not sticky.

Place it in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1.5–2 hours, or until doubled in size.
