1. Prepare the Chicken
Place the chicken slices on a clean surface. If needed, gently pound them to an even thickness for easier rolling. Season lightly with salt and black pepper.
2. Add the Filling
Lay one slice of mortadella over each piece of chicken. Add a portion of soft cheese on top, making sure not to overfill.
3. Roll and Secure
Carefully roll each chicken slice into a tight bundle, enclosing the filling inside. Secure with toothpicks if necessary to keep the rolls closed during cooking.
4. Arrange and Season
Place the rolls in a lightly greased baking dish. Drizzle with extra virgin olive oil and add a final pinch of salt and pepper on top.
5. Bake to Perfection
Preheat the oven to 180°C (350°F). Bake the chicken rolls for about 25–30 minutes, or until golden on the outside and fully cooked through.
6. Serve
Remove from the oven, let them rest for a few minutes, then serve warm to enjoy the delicious melted cheese center.
