Instructions
1. Prepare the Mushrooms
Gently wipe the mushrooms clean with a damp paper towel.
Make sure they are completely dry so the batter sticks well.
If the mushrooms are large, cut them in half; smaller ones can remain whole.
2. Make the Batter
In a large mixing bowl, combine:
flour
cornstarch
baking powder
smoked paprika
onion powder
black pepper
salt
Add the minced garlic and mix well.
Slowly pour in the cold sparkling water, whisking until you get a smooth, slightly thick batter.
The carbonation helps create a light, crispy coating.
3. Heat the Oil
Pour vegetable oil into a deep pan or pot (about 5–6 cm / 2 inches deep).
Heat to 175–180°C (350°F).
If you don’t have a thermometer, drop a little batter into the oil—if it sizzles and floats, the oil is ready.
4. Coat the Mushrooms
Dip each mushroom into the batter.
Ensure it is fully coated.
Let excess batter drip off before frying.
5. Fry Until Crispy
Carefully place battered mushrooms into the hot oil.
Fry in small batches to avoid overcrowding.
Cook for 3–4 minutes, turning occasionally, until golden brown and crispy.
6. Drain and Season
Remove mushrooms with a slotted spoon.
Place them on a paper towel-lined plate to drain excess oil.
Sprinkle lightly with extra salt if desired.
7. Garnish and Serve
Transfer to a serving plate.
Sprinkle with fresh parsley for color and freshness.
Serve immediately with your favorite dipping sauce.
