Preparation Method
1. Prepare the Chicken
If the chicken is not already cooked, cook a chicken breast until fully done, then shred or slice it into small pieces. Season lightly with salt and black pepper for extra flavor.
2. Assemble the Sandwich
Lay the two slices of bread on a flat surface. Spread a thin layer of marinara sauce on one side of each slice. Place the shredded chicken evenly over the sauce on one slice of bread. Sprinkle the grated Parmesan and shredded mozzarella cheese on top of the chicken. For additional flavor, add a light sprinkle of dried basil and garlic powder if desired. Place the second slice of bread on top with the sauce side facing down.
3. Grill the Sandwich
Heat a skillet over medium heat and add one tablespoon of olive oil or butter. Once hot, place the sandwich in the pan. Cook for about 3–4 minutes on one side until the bread becomes golden and crispy. Carefully flip the sandwich and cook the other side for another 3–4 minutes, pressing gently with a spatula to help the cheese melt evenly and the bread toast perfectly.
4. Serve
Remove the sandwich from the skillet and allow it to cool for about a minute. Slice it in half and serve warm while the cheese is still melted and gooey.
