2. Melt Butter Over Low Heat
Place a nonstick or well-seasoned skillet on the stove.
Add butter. Heat over medium-low to low until melted and foamy—but not browned.
3. Cook Gently—Stir Constantly
Pour in eggs. Let sit 5 seconds, then stir slowly and continuously with a silicone spatula or wooden spoon.
Use a folding motion: push from edges to center, gently scrambling.
Keep heat low—you should hear a soft sizzle, not a crackle.
4. Pull Off Heat Early
When eggs are mostly set but still slightly runny (about 1–2 minutes in), remove from heat.
Continue stirring off-heat—the residual warmth will finish cooking them to soft, glossy perfection.
5. Serve Immediately
Transfer to plates right away. Top with fresh herbs, cheese, or hot sauce.
Never let them sit in the pan—they’ll overcook!
