Instructions
1. Prepare the Oven
Preheat oven to 180°C (350°F)
Line a muffin tin with paper liners
2. Make the Batter
In a bowl, mix oats, flour, baking powder, baking soda, salt, and cinnamon
In another bowl, whisk eggs, yogurt, maple syrup, oil, milk, and vanilla
Combine wet and dry ingredients gently
Fold in fruits or nuts
3. Prepare the Crumble
Mix oats, nuts, flour, sugar, and cinnamon
Add oil/butter and rub with fingers until crumbly
4. Assemble
Fill muffin cups about ¾ full
Generously sprinkle crumble on top (press lightly)
5. Bake
Bake for 18–22 minutes until golden
Let cool for 5–10 minutes before serving
